Thanksgiving week is upon us! I would be lying if I didn't share my feelings with you that this year is just not the same. Farmers tend to be portrayed as tough individuals and we also like to fancy ourselves as tough as nails, although we are just like everyone else. We have our ups and downs and crave comfort. The best form of comfort for me on some down time is cooking really soul satisfying, wholesome comfort food!
Our families (mine and Bill's) all love to cook and have Thanksgiving specialties. Our moms happen to have almost identical stuffing (dressing in some circles) recipes. The only difference is Mom Doris' (Bill's mom) addition of sausage. But only really good sausage, or the flavor is not right. This year, we found a new butcher that really knows how to work magic with heritage breed lard pigs and knows the Mangalitsa, which is hard to find in this age of commercial breed "other white meat" pork. Butchering a lard breed heritage pig humanely, correctly, and making use of the whole animal is very important to us and to you, our customers.
